Here in the Appalachian Mountains, the locals will pick Branch Lettuce in the near by creeks and saute or “kill” it for dinner. This recipe is traditional to the area, please enjoy it!
4 cups of loosely packed branch lettuce
2 cloves garlic, sliced thin
2 pieces of bacon, cut in to 1″ pieces
salt and fresh pepper to taste
Wash the hairs off of the lettuce leaves and spin dry. Heat a skillet on medium and saute bacon pieces until fat has rendered and are crispy. Toss in garlic, wait thirty seconds, and toss in greens. Lightly turn greens over several times until just wilted. Salt and pepper to taste.
Another wonderful idea for branch lettuce is to make the wilted greens, let them sit a few minutes to cool off and then roll them up in a butterflied pork loin, tie it with three pieces of string, and bake it for 35 minutes on 350 or until temperature is 155.
